5Just as good as Lodge Brand

I read another review of this product stating that it is sticky. I couldn't disagree more. I have this pan and one other by this same brand. I specifically bought this pan after thoroughly enjoying the other. I do not own any Le Creuset and at five times the cost of Lodge I don't think I ever will. Lodge is excellent, but this pan is just as good. I make omellettes for one in this every time and do not notice excessive sticking. And it cleans very, very easily. Heuck on the other hand is horrendous for cleaning! Avoid that at all costs!My only complaint (in general) is that I hate how pans are measured. This 11 inch is far smaller than I expected. The usable space of the pan in diameter (inside rim to inside - not on the pour spouts) is 9.75 inches. The sides of the pan slope down slightly and the flat bottom base of the pan is about 8 inches. I'm very picky about this because I've been disappointed in size when ordering online...but that seems to be the standard across all brands - to measure the diameter on the outside of the spout across.

This is a nice enamel-finished cast-iron pan. Enamel coating does not make it non-stick - just easier to clean and therefor a cleaner pan to cook with. If you don't use enough oil and the food sticks, baking soda does the trick of easily cleaning any burnt parts off. Only downside is that it is very heavy. Works great for sauces. Love the color.

5if it's sticky . . . you burned your food

This is great, and exactly what I was looking for on my budget. Would I prefer Le Creuset? No. Not after using this for a few weeks. It has everything except a fancy french name.Cooking with cast iron requires some technique. Pans heat slowly, but they are easy to overheat. Always warm the skillet before adding butter or oil, always heat the butter or oil before adding whatever it is that you're cooking. But hey that's Cooking 101.It's especially tricky to find the exact right temperature to cook if you have an electric instead of gas range, as I am cursed with. Just keep an eye on what works. If a 3 setting is working for you, I advise placing the pan on the burner, set the burnet to 3, and wait (10 minutes?) . . . instead of setting it high and turning it down. It will ensure that it heats slowly and evenly.If you haven't burned your food, cleanup is a snap. Just start with some boiling water, and come back in a few. Even though it's enameled, I still find myself using soap infrequently. Never ever put cold water in a hot iron skillet when you are done cooking. It can crack the skillet.Overall I'm thrilled, we will see how the red enamel on the exterior holds up.
